survey, how much would you pay for a quality chef knife like this?

feels heavy and quality
handle is some kind composite i would make up a name for like “corinthian leather”😄
the sorta knurled texture is called hammered steel i believe
comes in a nice box, suitable for gifting

I don't know if this knife is really comparable. As previously stated by others, steel quality is very important but the other thing that matters to experienced users is the balance of the knife.
Are you looking to sell this to mid-to-high end users, or is the target the novice who thinks they are getting a deal at $60-75?

when you launch a new product, Amazon has this program called "Vines" where you give maybe 30 people free product and you hope they write kind reviews....it's gets you off the ground at least

Most I've ever spent on a knife is about $150, but it has been awesome. It holds an edge amazingly well.
There are a lot of snake-oil sales pitches out there with cutlery these days. There are companies that are taking $15 knives, giving them fancy packaging and marketing, and selling them for $100+.
A well-made knife made of quality steel ain't cheap. But a high price tag is absolutely no indication you have a well-made knife made of quality steel.
