Apples and Oranges. Every coach doesn't become a free agent at the end of

every season. Coaches have multi-year contracts, and schools are compensated to some degree if another school poaches their coach. There are rules and restrictions with coaches, not with players. Rules for players are inconsistent from state to state giving some schools advantages over others. And I did hear people complain about the amount of money being paid to coaches, and how universities which are intended to be about education are paying their highest salaries to coaches. I don't hear many people complaining about players getting a cut of the money. The big complaints seem to be about the lack of restrictions and controls. Professional sports leagues have rules in place to help keep finances under control and ensure some sort of balance and competition between schools. That doesn't exist at the college level. College is about whoever can raise the most money. There is no salary cap, no draft process, no multi-year contracts. College is chaos when it comes to the players. The coaches have similar arrangements to pro coaches with contracts. And yes, coaching salaries are out of control as well. College coaches are moving ahead of NFL coaches when it comes to salary.
