Maybe dumb but...are mats assigned simply 1-8 down the 125 bracket and on?
And how can we get those mat #s if you fall behind (always) or watch much later....is Flo option only real time or is it saved?
tx...asking for a friend...

I used to use TrackWrestling's "live stats" feed to monitor who's assigned to what mats. I think Flo has now absorbed them, but I expect that they will have a similar feed with upcoming mat assignments.
Your idea does make sense, though. I think the main problem there is the mats either get out of sync (e.g., many of falls on the mats with #1 vs #32) or you have to burn extra time during some VERY long sessions to keep them in sync. The current system allows them to balance out the matches at the cost of not knowing your mat assignment until late. The pigtail matches are another possible issue, but there's only 20 of them (10 in the first round, 10 in the consolations) that you could spread across the 8 mats semi-evenly.

The other thing is if you watch the all-mats feed on ESPN+, it has an upcoming bouts ticker at the bottom.

Flo is going to be your best bet and I think their updated platform this year has been better.
