Whether the transfer players are 100% honest is another story. Exit interviews are confidential, conducted by the AD, and do not include the head coach present. They don't make this feedback public to fans since it's confidential, but the AD will share some of the results with the head coach. It is not always about $$, there are so many other reasons why they leave. Any “exit interview” will be done by the coach (head and/or positional). These interviews are the face to face conversations at the end of the year that go into subjects like playing time, fit for next year and in the future, further development and what a player needs to do, and of course money. The coaches could tell a player they no longer have a spot, or a player can take this information and decide to leave for any number of reasons. Players could just be unhappy with life at tech and want to move on regardless of any other factor. Or a player could have graduated and want to go get a masters at another school. I would hope these details are shared in the AD with those who can make college athletes experiences better, but much of these conversations will be too personal to be shared with fans. @TheFacts puts it succinctly, it’s mostly going to be about $$ and playing time. Most of these kids have 4 to 5 years to make as much money as possible while playing in college with no pro prospects. To do so they need to play early and often. It sucks for us fans, but I understand the desire to capitalize on this, and can’t fault any player for doing so.

This is a new day, players believe they hold one value and the team puts a different value on them. When those two don't align then the player can test the open market. The average fan is never going to get the real story.
