OK, world travelers, if you have a layover in another country do you have
to go through customs there for your layover if you're not leaving the secured area of the airport?

London Heathrow to Dublin Ireland, yes for example. Geneva from swiss side to french side is just passport control and proof you just flew in/heading out. We had to in Munich to Athens as well. Now that I think about it, I had to from Vancouver through Toronto to get back into the US...back to IAD.

go through any security. We got off the plane and stayed in the terminal area, got on the next plane and took off. The way back we did the same thing but they setup some weird temporary security thing right there in the terminal. We had to walk out our gate, on the other side of some rope, and go through security again just to get to the same gate we just deplaned from. If you wanted to use the bathroom then you had to go through security all over. It was a very odd setup.

Heathrow is a great example. They have a pretty large "secure" area for international travelers, so if you're changing planes, you just stay in that area until it's time to board. If you have a long layover and want to see more of the airport, you can go out, but you'll have to get in line to reenter the secure area of the airport.
There are plenty of bars/restaurants and shops to feed & entertain you while you wait for your connecting flight.

up your bags (they are checked to final destination) then no need to leave security. Having said that we did have to do that in Philadelphia because there was no direct link between International terminal and domestic. So maybe might be the right answer. What airport are we talking about?

can be a cluster in some airports. We generally leave 2 hours between flights. You can do less, but any blip and you are running through airports. We also have some lounge memberships and they are almost always a nice way to wait for a flight.
