@Brewing_Hokie - would this fix work? I have a good friend with
some excellent home brewing equipment. Occasionally, we'll get together and make a 10 gallon batch. We did that this past weekend to make a batch of "Denny's Wrye Smile" - something I used to brew myself, but I haven't in awhile (if you've heard of it).
My friend is a mechanical engineer and is very meticulous. EVERY time I've brewed with him before, it all went almost perfectly. This batch seems cursed though. I won't go through EVERYTHING, but a number of issues that required "Improvise, adapt, overcome".
One was that my friend mis read the recipe. He thought that about 1/2 the hops were a late addition in the fermentation kettle. It wasn't until after we had it all sealed up that he realized that, yes, those hops needed 60 minutes of boil for some, 30 minutes for others, and 1 minute for the rest.
So we boiled another gallon of water and made hop water, cooled it and added it to the fermentation kettle. Should that work?
One other note. My friend prides himself on his brewhouse efficiency measure. It's 85% or so. But the Denny's Wrye Smile presumes about 65%. So while it's supposed to be a high alcohol beer (8 to 8.5%), the brix measure projects 11 to 12%. So we've accidentally made barley wine....but the extra hop water dilution should only help with that issue.
