Smoked butts dilemma...
Smoked two pork butts overnight. The plan is to shred then freeze it for family beach week in 2 weeks.
One butt cooperated and finished when expected this morning. The other was way behind. (Pun intended).
The issue is, I have to leave shortly to take my daughter to the Virginia Commonwealth Games and I won't be back till Sunday.
I'm going to have to let them rest and then have my wife stick them in the fridge for me and I'll have to shred them on Sunday night. I've never refrigerated a whole cooked pork butt. I guess I'm wondering if it will be ok to do that. Or do I need my wife (heaven help her) shred them this evening and refrigerate it that way?

may be too late, but i would shred then refrig in ice water. Get temp below
