My half Irish mother made it all the time ...

I do cook it a crock pot. Cook corn beef and add cabbage at the end so the cabbage does not overcook. Now with that, the brand of corned beef is important. I have given up mostly because the brands they have in food lion are horrible. Your failures most likely are on the brand than your cooking method. I cannot remember the name and it is still around even sometimes at Food Lion, but it was the only brand my mom would buy.
