Invest in a vacuum sealer...

Then you can divide up the tenderloin ends into steaks / bourgignon meat, and then prep the full tenderloin into the size required. Finally invested in a vacuum sealer this past week at Costco to prep/seal the Prime Prime Rib Roast I currently have in the oven!
