Was your financial contribution a gift, or a loan?
If this is a no-strings-attached gift, wow...that is both amazing and incredibly generous. If this was a loan that your DIL will pay back, I think the selection of paper towel dispenser is trivial and probably not worth getting worked up over since, ultimately, it's your DIL's money, just paid back over time. But if this is in the context of a 7-figure gift to fund the project, not to mention the time and effort you have invested in pushing the project across the finish line, I certainly understand where you are coming from. In that case, is the real issue here that your DIL has not shown enough appreciation throughout the project? If so, I think that's a bigger issue that probably needs to be dealt with. I definitely understand your frustration if this is the case, and I would encourage you to discuss that with your DIL and son sooner rather than later. Allowing something like that to fester over time could give birth to resentment, which is not going to be healthy.
On the other hand, if your DIL and son have expressed sincere appreciation to you, and your irritation with this one instance is really limited to a disagreement about a specific accessory, I would suggest letting it go. Men and women often have extremely different senses of style, and since your DIL is the end-user, it makes sense for her to have final say on specific decisions such as this.
Regardless, congratulations on helping kickstart a business that sounds like it will flourish and will not only be a blessing your son and his wife, but also to those who will be employed there, as well as the customers and their animals who will be treated there.
