Really depends on your comfort level
If you feel comfortable that you'd be able to find someone trustworthy to do it at a good price, sure, go ahead. And yeah, you'll probably pay a bit more for the Lowe's installer to do it. But you're paying for the convenience of not having to waste your time finding someone and scheduling someone to coincide with the delivery. It's all scheduled and taken care of for you. And if something goes wrong, you can call Lowe's to take care of it (though it might take some effort).
So do you want to spend your time trying to find the right person to install it? Or do you want to just click one button and then only spend your time if there's a problem later on?
The math likely changes if you've already got a guy. But going in blind, it's just personal preference and priorities.

Replacing a water heater. Should I have home depot/Lowe's do the install?
