Stanford chose Cardinal as its nickname because the color cardinal is one
of the school's official color. It is no different than Syracuse's decision to change its nickname to Orange. FWIW there are a couple schools that have opted to use a color as its nickname. Below is a list of some of those schools for your reference.
North Texas Mean Green
Harvard Crimson
Cornell Big Red
Dartmouth Big Green
Bluefield State Big Blue/Lady Blues
Illinois College Blueboy/Lady Blues
Henderson State Reddies/Lady Reddies
Roanoke Maroons
Chicago Maroons
Denison Big Reds
New Brunswick Varsity Reds
Kent State Golden Flashes
St. Francis (PA) Red Flashes
NYU Violets
McDaniel Green Terror
John Carroll Blue Streaks
Toronto Varsity Blues
UW–Eau Claire Blugolds
