The bills that I can pay via check, I do. As for the ....

.... rest of it, I do record all other transactions also. The reason I do so is weird. My credit union account is the one that we do most banking on, including all checks and bills. But you can really only bazillion-factor pain in the a$$ authenticate using a single device at a time. My wife used to do all the accounting, so my account was authentication locked up to her computer. But now she spends a lot of time at the vacation house, and I do most of the bill paying. Rather than go thru the pain of de-authenticating and re-authenticating every time I just want to look for a stinkin balance, I just left all the on-line banking functions tied to her device. Therefore I do all account balancing on paper and just match it up with the balance I can see when I plug my debit card into the ATM. Whenever I am at the vacation house with her, we double check all my paperwork against the on-line account. It always matches. I really hate cybersecurity. I just want a website where I can enter all my personal info and deliberately broadcast it to all known hackers including the Russians and Chinese, and in return I get 5 minutes of non-security convenience with my accounts just before they are emptied of all their assets. The 5 minutes of no security would be worth it!
