I have done what you are contemplating multiple times although at a slightly less temperature. Usually pull the butts from the cooker between 165 and 170 degrees and seal in plastic bags essentially cooking further in its own juices. They sit in cooler anywhere from 3 - 5 hours and then we chop, pull and or cut for serving.
