But is not legal at ABCs in Virginia. After the soak stage (@ 20 days) you toss out the lemon skins and add water & simple syrup mixture which dilutes by half. Fair amount of alcohol gets absorbed in the lemon skins so final “product” isn’t as strong as the appearance.
Vodka is alternative (used for strawberry and cherry) but wouldn’t use it for limoncello. Strong Grappa is used for limoncello in Europe.
