I took an Indian cooking class…

And had to buy a bunch of authentic spices from a local Indian market. All the dishes were awesome. Then I didn’t cook Indian style at home for 6 months and the spices got old. Then the next time I got the urge to make something it was bland and not as tasty. Key is to use authentic ingredients when they are fresh. Downside is unless you are Indian you are not not going to use the spices continuously enough to keep them fresh.
