That looks really sweet. I smoked 2 pork picnics this weekend because
Winn Dixie the beef people were giving them away for .69 cents/lb the week before. I could have sworn I had enough wood when I started, but couldn't find it anywhere, so I had to scramble. I ran over to Worldwide Sportsman (Bass Pro) and saw a 20lb bag for $9.99! I made the cashier check the price before I bought it - yup, 9.99. I almost stocked up, but figured it was easy to just come back. Welp, when I got home to get the chips in the smoker, I realized it was pellets, not real wood. I thought I screwed up, but I threw them in my electric smoker anyway, and man...I've never had so much good smoke! I am sold on pellets! Cheaper and smokier - always learning.
And use the "Texas crutch". Smoke for 4-5 hours, wrap in foil water tight, and throw in some beer or apple juice. The meat is dreamy moist, and supposedly speeds up the cooking time. I haven't found the speed up part to be true yet, but I have only done that twice now. Still working on my new found craft. Enjoy that new grill - it is a lot of fun and satisfaction.
