Maybe not "student athletes", but we are essentially talking about...
...professional athletes. Once you accept payment, you should be contractually obligated to remain at the school, in my opinion. Or, if you leave, I believe you should owe back at least a portion of what you were paid. We've already discussed this ad nauseum here, so I won't belabor the point, but this is like the NFL without contracts. Every player is basically a free agent every single year.
